What is a LOCUS LTVFM vacuum frying machine?
An LTVFM machine is a fully automatic, PLC-controlled batch fryer that cooks under vacuum instead of open atmosphere. Lowering the boiling point of oil to ~100°C preserves colour, flavour and nutrients while a built-in centrifuge de-oils the finished product, giving crisp, low-oil snacks with a longer shelf life than conventional frying.
